Analyzing Determinants of Rice Consumption: An Application of Age-Period-Cohort model

Since the 1980s, there has been a consistent decline in rice consumption in Korea. Nonetheless, Given the fact that rice is a staple food in Korea, comprehending the factors influencing its consumption remains crucial. This study analyzes the determinants of rice consumption in Korean households by decomposing the age and cohort effects. Korean National Health and Nutrition Examination Survey(KNHNES) were employed for an Age-Period-Cohort(APC) analysis. As a result, the age effect shows that rice consumption was the highest in teenagers and continued to decrease after 20s. In addition, the generation (cohort) effect reveals that the higher the household, the higher the rice consumption. The year effect did not show any particular trend. These results collectively suggest that rice consumption is attributed to the net age effect rather than the simple decline trend.
