Purpose of Research
○Traditional economic activities are based on a linear economic model of resource extraction-production-consumption-disposal, but this causes various problems such as resource depletion, environmental pollution, and climate change. For efficient resource utilization and greenhouse gas reduction, many countries are promoting the transition to a circular economy system and expanding waste upcycling. In Korea’s agri-food sector, upcycling has not yet been activated, still focusing on recycling centered on feed and compost production. As the production of upcycled food using agri-food by-products is mentioned as a way to reduce greenhouse gases, maintain food security, and simultaneously serve as a future growth engine in the food industry, active promotion is necessary. Therefore, this study examines the strategies needed to revitalize the upcycled food market.
